i love … poached egg over olive herb pesto polenta

This is not my normal weeknight dinner. It just looked so pretty and delicious when I saw it over at Sacramento Street. Also, my husband grew up eating grits … polenta = grits. So, this is my way of thanking him for tolerating my vegetarianism:)
It was easy. I was a little nervous about poaching eggs but it was a simple process … and so healthy. Perfect for a cold winter day.
