Healthy Recipe Roundup by Modern Frills

 

I am a bit of health nut.  I am a vegetarian. I have my green juice every morning.  I mix up weird concoctions in my blender and feed it to my kids.  My oldest loves everything.  My youngest gives me a distrustful look and smells everything I feed her.   When looking at recipes, I am always looking for a healthy meal.  The kicker, it has to taste like it isn’t healthy.  Here are a few of my tried and true recipes, all kid and husband approved!

Top LeftBlack Bean & Quinoa Enchilada Bake by Two Peas & Their Pod.  This stuff is amazing.  It tastes completely guilty as all Mexican food should, but it is healthy.  I even left the cheese out on half of the pan and it was still delish.  I just found this one a couple weeks ago and we have already had it for dinner 3 times.  Major winner!

Bottom LeftTomato Basil Cream Pasta by Lil Blue Boo.  Easy is important during the week too and this one checks that box as well.  This is a regular on our menu especially when my son has had a game.  He is HUNGRY after basketball and this is a favorite.  Everyone loves it.  My picky eater only asks for the sauce on the side which doesn’t make sense as she mixes it together anyway.  Whatever … she eats it!  Make this for your family and they will love you!

Bottom RightHearty White Bean Vegetable Soup by Henry Happened.  I could eat soup every night even during the Texas summer.  I don’t care.  It is good.  My family is over me and my soup addiction, except for this one.  I don’t think I have ever put butternut squash in a veggie soup until now.  I should have.  It is perfect.  Serve this with a side of crusty bread and done! Oh, and it freezes beautifully!  Love a good freezer dinner.

pinterest success … savory recipes

Pinterest recipes are a gamble.  Many of them say that they are delicious and super easy to prepare … but after a few (hundred) fails, I no longer believe they are good until I have made them myself.  I have even started a new Pinterest board (Pin This, Done That: Recipes) to keep track of my successes!  I thought it might be nice if I shared my successes … to save you the trouble!  These have all been given the thumbs up by me and/or my family!  I am completely addicted to the Roasted Veggies with Garlic Cream.  I only roast veggies with coconut oil now … they are SOOOO good!

i love … Potato Salad with Carmelized Onions and Roasted Chile Vinaigrette

While looking for ideas on what to make my husband for his birthday dinner, I came across this potato salad recipe in the latest issue of Better Homes & Gardens.  I should mention that I am not a fan of cold salads.  Potato Salad falls into this category, right next to macaroni salad, jello salad, etc.  Not my thing at all.  Since it was for my husband’s birthday dinner and I sort of like him … I decided to give it a try.

Make it.  It is stupid good!  Everyone loved it AND it fit into my “I’m attempting Vegan for the Summer” idea.   It can be served hot, cold or at room temperature.  I reduced the oil in my vinaigrette down to 1 tablespoon to decrease the fat calories.  It didn’t affect the flavor one bit.  I added a handful of cilantro to the vinaigrette while it was in the blender.  I also used olive oil butter instead of regular butter … for the vegan thing.  Make extra of the vinaigrette.  You will want to put it on everything!

I would have taken a picture of the one that I made, but we ate it all.  So I snapped a picture with my phone of the magazine page.

i love … poached egg over olive herb pesto polenta

This is not my normal weeknight dinner.  It just looked so pretty and delicious when I saw it over at Sacramento Street.  Also, my husband grew up eating grits … polenta = grits.  So, this is my way of thanking him for tolerating my vegetarianism:)

It was easy.  I was a little nervous about poaching eggs but it was a simple process … and so healthy.  Perfect for a cold winter day.

breakfast of champions…

My husband is always up for trying something new when it comes to food.  This morning, he brought this home for breakfast…

1. The Homer … Glazed donut with strawberry icing and tons of sprinkles.

2. The Hypnotic … Chocolate cake donut with chocolate icing, pretzels, crushed Peanut Butter Captain Crunch and a carmel drizzle.

3. The Morning Breath … Chocolate cake donut with chocolate icing covered in Junior Mints.

4. The Mexican … Glazed donut with vanilla icing, fresh sliced jalapenos and topped with a few shakes of tabasco sauce.
